My biggest dessert weakness is Homemade No Bake Tiramisu. After testing several versions, my recipe is PERFECTION! It starts with layers of espresso and coffee liqueur soaked ladyfingers, lightly sweet mascarpone filling and delicious dark chocolate shavings.
No Bake Tiramisu
There are thousands of homemade tiramisu recipes. So what sets this one a part? Well, this recipe is prepared the traditional way with uncooked pasteurized egg yolks, which makes this a NO BAKE recipe. While this may seem worrisome, I promise you there is nothing to fear. It’s completely safe and very delicious.
My recipe starts with these main ingredients:
- Large Eggs Yolks
- Mascarpone Cheese
- White Sugar
- Plenty of unsweetened espresso
- Ladyfingers
- and Kahlua Coffee Liqueur
Execution
Homemade No Bake Tiramisu is labor of love that requires the right execution. While I promise this recipe is easy to replicate, there are a few tips that set this recipe apart in all the BEST ways.
My first tip is: CREAM THE EGGS AND SUGAR UNTIL LIGHT YELLOW! For some reason, people like to speed through this step which results in a loose, almost soupy tiramisu. While it will still taste great, the beauty to this Homemade No Bake Tiramisu is seeing those perfectly firm layers retain their shape, even after serving. I recommend creaming the eggs and sugar for at least 10 minutes on medium speed. This will promote a thick yet airy consistency. It should appear a pale or light yellow color.
By executing this step correctly, it also eliminates the need for adding egg whites or heavy cream, like in other tiramisu recipes.
The second tip: ENHANCE THE COFFEE FLAVOR WITH COFFEE LIQEUER. I love this Homemade No Bake Tiramisu recipe because it doesn’t skimp on the coffee. Instead of just using espresso to soak the ladyfingers. I use a mixture of espresso AND Kahlua coffee liqueur. For even more coffee infusion, I highly recommend adding a splash of the coffee liqueur in the mascarpone cream too! Double the penetration, double the flavor!
Last tip: SKIP THE COCOA POWDER AND USE CHOCOALTE SHAVINGS FOR RICHNESS. The classic take on tiramisu includes a dusting of cocoa powder but at times I find it a little chalky. So to avoid the weird texture and again, enhance the flavor, use a good quality dark chocolate (like a 60 percent cacao) and generously shave after each layer of cream.
Finish the Homemade No Bake Tiramisu by cooling overnight and enjoy!
